Après Ski

Meet Your New Favourite Winter Cocktail

After a long day carving through some fresh powder on the hill, nothing both rewards your domination of the great outdoors and warms your bones like a little whisky cocktail. We’ve asked restaurant Le Bremner’s artisanal bartender Dan Lima to teach you how to skip the light beer and truly wow your guests.

WHAT YOU’LL NEED

1 1/2 oz Canadian Club whisky
1/2 oz Dom Benedictine liqueur
1/2 oz allspice and orange zest syrup
3 dashes angostura bitters
2 sprigs fresh rosemary
Finish with rosemary spray

GETTING PREPPED

Allspice Syrup:
500 ml of water
250 ml sugar
2 tablespoons allspice
Zest of one orange

Bring water to a boil, add allspice and orange zest. Simmer for 5 minutes. Add sugar slowly until dissolved (approximately 1 minute). Let cool before serving.

Rosemary Spray:
2 sprigs of rosemary
500 ml water.

Bring water to a boil, add rosemary. Cook for 10 minutes at medium heat. Let cool. Add to spray bottle.

Once you have your base ingredients, you’ll need to actually make the drink.

BUILD IN MIXING GLASS

Add:
Ice
1 sprig of rosemary
Angostura bitters
Whisky
Dom Benedictine
Allspice and orange zest syrup

Stir until chilled and strain into a chilled rock glass. Add large ice cube. Top with rosemary spray and remaining rosemary sprig. Serve. If you’ve made it to this point you’ll have several more drink orders to fill, so repeat and enjoy.
